Similar to a mounds bar only better! Yields: 26 truffle sized candies
- 1 cup unsweetened shredded coconut
- 1/4 cup chopped pecans
- 1/2 tbsp. coconut flour
- 1/2 cup coconut manna (place jar in hot water or microwave to soften)
- 1/2 cup raw honey
- 1 tsp. pure vanilla extract
- 1-2 tbsp. coconut oil
- 1/2 cup – 3/4 cup dark chocolate chips (65% cocoa)
Mix the first 6 ingredients together until combined, using a small cookie scoop or rounded tablespoon to form balls, place on wax paper and put in the freezer for 30 minutes.
In a small pot melt chocolate and coconut oil together.
Using a toothpick or skewer inserted into ball, dip into chocolate and place on wax paper or into mini muffin wrappers.
Keep in refrigerator in an air tight container and enjoy!
